Savor La Gomera

In La Gomera, as in the rest of the Canary archipelago, gastronomy is characterized by the use of local product. On the island there are a variety of unique recipes and dishes that make this destination an ideal place for food lovers.

Typical dishes and products of La Gomera

It is a spread or pate made from cured goat cheese, paprika, oil and garlic. It is usually taken with toast or bread, being an ideal starter. In addition, it is believed to be the last trace of a popular salsa in Spain during the Middle Ages.

It is known as guarapo or palm syrup to the sap that is obtained from the Canary palm. Because of its high sugar content, this liquid is viscous, so to make palm syrup, it is first cooked slowly. This process removes impurities and reduces the amount of water. In addition, this makes it acquire its characteristic roasted color and texture, similar to honey obtained from bees.

Made from watercress, potatoes, meat or pork ribs and beans. You can also bring pineapple, onions, pumpkins or bubangos, according to the recipe.

Gofio is a typical product of the Canary Islands, it is a flour made from toasted cereals, usually wheat or millo (corn), but others can be used and combined with each other. It is a very nutritious food and the most representative of the islands after the banana.

Specifically, one of the mills on the island of La Gomera has won the award for best gofio for several consecutive years.

Gomeros sweets are another product that deserves to be highlighted. On the island a wide variety of traditional recipes are still made. Cookies, rosquets and scones continue to be made today. These products are the perfect souvenir for the sweet tooth. Other notable sweets are:

Torta de Vilana: The Torta de Vilana is a typical sweet of La Gomera that is usually made especially when it comes to Christmas. This cake has as distinctive ingredients almonds, raisins and potato or sweet potato.

Roasted milk: a dessert made mainly in La Gomera, similar to flan or quesillo and whose ingredients are mainly milk, condensed milk, egg, lemon zest and cinnamon sticks.

Despite the difficulties of the island’s sloping terrain, there is room for viticulture. In the wines of the island predominate some varieties of grapes as, for example, white stranger and white listán for white wines; and black listán and negramoll for red wines.

It is usually made by hand with raw goat milk or mixture of raw goat and sheep milk. It is usually marketed in three different maturation stages: fresh, semi-cured and cured.

It is a dish in which small potatoes are used, such as the pretty potato, they are boiled without removing the skin and added salt. When serving, mojo is added, a typical Canarian salsa of which two main types are distinguished: red mojo, made with pepper, oil and paprika; and green mojo, made with coriander and oil.

In the islands there is an important variety of marine biodiversity, which is reflected in its rich gastronomy. In many restaurants on the island we can find dishes where the main element is fish. Some of the most commonly used are the old and the cherne, typical of the Canary coasts.
